As promised, here is my recipe for Bacon-Date Appetizers. It’s the easiest recipe ever but looks oh-so-fancy and tastes amazing. This is based off one I found on allrecipes.com
- 1 package of pitted dates (Usually found in a round plastic container near the nuts and dried fruit. Make sure you buy the ones without pits!!)
- 1 package of bacon – look for bacon that has much more meat than fat
Preheat oven to 400. Place a baking rack over a baking sheet. Cut the bacon into thirds. Wrap each date with a piece of bacon, secure with a toothpick, and place on the rack. Bake for 15-20 minutes.
The rack keeps the bacon fat from pooling around the dates, so they’re deliciously-bacony without being too greasy.
You can also modify this recipe by stuffing the date before wrapping it – there’s a handy little space where the pit used to be. In the past, I’ve stuffed with almonds and goat cheese, although neither of these are allergen-safe. And it can take a LOT of time to stuff each date.
