These Carrot and Zucchini Cookies from sunnysleevez sound delicious. I might try to make an allergen-free version by substituting the butter for dairy- and soy-free spread. I’ve found dairy- and soy-free baking to be tricky though, things don’t mix and bond the way you want or expect them to. Currently waiting on delivery of a few cookbooks which will hopefully give me the substitution answers I’m looking for.
